Red Velvet Swirl Brownies

Baking time: 30-40 minutes
Yield: 12-16 brownies
Ingredients
- 2 Tbsp. butter, for the pan
Brownie layer
- 2 sticks unsalted butter
- 2 cups sugar
- 2 tsp. vanilla extract
- 1/2 cup cocoa powder
- 1/8 tsp. salt
- 2 Tbsp. red food coloring
- 2 tsp. vinegar
- 4 eggs
- 1 ½ cups all-purpose flour
- ½ cup chopped, toasted walnuts
Cream cheese layer:
- 16 oz. cream cheese, softened
- ½ cup sugar
- 2 eggs
- 1/4 tsp. vanilla extract
Instructions
- Preheat the oven to 350 degrees.
- Butter a 13 x 9 inch pan, set aside.
Brownie layer:
- Melt the butter in a saucepan at medium heat.
- Remove the butter to a large bowl and add the sugar, vanilla, cocoa powder, salt, food coloring and vinegar (in that order), mixing between additions.
- Whisk the eggs in a small bowl and stir into the cocoa mix.
- Fold in the flour until lightly combined.
- Stir in the walnuts.
- Pour all but 1/2 cup of the batter into the prepared pan, reserving the remaining 1/2 cup for the top.
Cream cheese layer:
- Blend together the cream cheese, sugar, eggs, and vanilla in a medium bowl.
- Gently spread the cream cheese layer onto the top of the brownie batter in pan.
- Dollop the remaining brownie batter over the cream cheese layer.
- Using the tip of a knife, drag the tip through the cream cheese mixture to create a swirl pattern.
Final steps
- Bake the brownies for 30-40 minutes, or until they test done
- Allow the brownies to cool completely before cutting.
