Baking temperature: 350º F
Baking time: 20 - 25 minutes
Yield: 12 muffins
Ingredients
- 2 cups King Arthur Whole Wheat Flour
- ½ cup almond flour
- 1 tsp. cinnamon
- 2 tsp. baking powder
- ¼ tsp. salt
- ¼ tsp. baking soda
- ½ cup melted coconut oil
- ¾ cup pure maple syrup
- ½ cup applesauce
- 1 apple, grated
- 1 egg
- ½ cup buttermilk
- ½ cup walnuts, chopped
Topping:
- ¼ cup chopped walnuts
- 3 tbsp. brown sugar
- ½ tsp. cinnamon
- 2-3 tsp. raw sugar
Instructions
- Preheat oven to 350 and grease 12 muffin tins. In a large bowl, mix together flour, almond flour, cinnamon, baking powder, baking soda and salt. In separate bowl, mix together remaining ingredients.
- Fold wet mixture into dry mixture and stir until just combined
- Fill 12 muffin tins. Mix together ingredients for topping and sprinkle about 1 tsp. over each muffin. Bake for 20-25 minutes. Serve warm.
