Whole Wheat Apple Muffins with Walnuts

Baking temperature: 350º F
Baking time: 20 - 25 minutes
Yield: 12 muffins

Ingredients
  • 2 cups King Arthur Whole Wheat Flour
  • ½ cup almond flour
  • 1 tsp. cinnamon
  • 2 tsp. baking powder
  • ¼ tsp. salt
  • ¼ tsp. baking soda
  • ½ cup melted coconut oil
  • ¾ cup pure maple syrup
  • ½ cup applesauce
  • 1 apple, grated
  • 1 egg
  • ½ cup buttermilk
  • ½ cup walnuts, chopped

Topping:

  • ¼ cup chopped walnuts
  • 3 tbsp. brown sugar
  • ½ tsp. cinnamon
  • 2-3 tsp. raw sugar
Instructions
  1. Preheat oven to 350 and grease 12 muffin tins. In a large bowl, mix together flour, almond flour, cinnamon, baking powder, baking soda and salt. In separate bowl, mix together remaining ingredients.
  2. Fold wet mixture into dry mixture and stir until just combined
  3. Fill 12 muffin tins. Mix together ingredients for topping and sprinkle about 1 tsp. over each muffin. Bake for 20-25 minutes. Serve warm.
