Baking temperature: 350º F
Baking time: 60 - 70 minutes
Yield: 1 loaf (9 x 5 inch)
Ingredients
- 3 cups all-purpose flour
- ¾ cup granulated sugar
- 1 tbsp. baking Powder
- ½ tsp. baking soda
- ¼ tsp. salt
- 3 eggs
- ½ cup butter, melted
- 2/3 cup orange juice
- ½ cup milk
- 1 tbsp. grated orange rind
- 1 cup blueberries
Glaze:
- 1 cup powdered sugar
- 1 tsp. grated orange rind
- 2 tbsp. orange juice
Instructions
- Sift dry ingredients
- Beat eggs, add melted butter, orange juice, milk and orange rind and mix well
- Pour liquid mixture into dry ingredients and stir until well moistened
- Carefully fold in blueberries
- Pour into 5x9 inch loaf pan, greased and floured
- Bake in preheated 350 degree oven for 60-70 minutes or until toothpick comes out without moist dough
- Let set for 10 minutes before removing form pan. Cool wire rack
- In small bowl, mix 1 tsp. grated orange rind, 1 cup powdered sugar and 2 tsp. orange juice and stir until smooth
