Corn Bread

First place, Quick Breads (Corn Bread), 2018

Baking temperature: 425º F
Baking time: 25 minutes
Yield: 1, 8" x 8" pan

Ingredients
  • 1 cup sifted flour
  • ¼ cup sugar
  • 4 tsp. baking powder
  • ¾ tsp. salt
  • 1 cup yellow cornmeal
  • 2 eggs
  • 1 cup buttermilk
  • ¼ cup soft shortening
Instructions
  1. Sift the first 4 ingredients.
  2. Mix in cornmeal.
  3. Add eggs, milk and shortening, stir just until moist and smooth.
  4. Don’t over mix.
  5. Pour into buttered square 8” x 8” pan.
  6. Bake approximately 25 minutes.
