Lemon Cheesecake Drop Cookies

Baking temperature: 350 degrees
Baking time: 10-11 minutes
Yield: 44 cookies

Ingredients

  • 1 8 oz. package cream cheese, at room temperature
  • ½ c sweet butter, at room temperature
  • 1 ¼ cups granulated sugar
  • 2 eggs
  • 1 t lemon flavoring
  • 2 ½ cups flour
  • 2 t baking powder
  • ½ t salt
  • Domino confectioners’ sugar

Instructions

  • Preheat oven to 350 degrees. Line two baking sheets with parchment paper
  • Beat cream cheese and butter together at high speed until fluffy and smooth
  • Add sugar to mixture and beat until incorporated and fluffy
  • Beat in eggs and lemon flavoring
  • In a separate medium sized bowl, sift together flour, baking powder and salt
  • Gradually add dry ingredients to the butter mixture and stir just until incorporated, do not overmix
  • Drop by rounded tablespoons onto prepared pans. Batter will be sticky
  • Bake until cookies are light in color, not browned, and just starting to brown on the bottom
  • Cook cookies on baking sheets for a few minutes before transferring to a wire rack to cool completely
  • When cooled, dust with confectioners’ sugar
