Honey Almond Cake

Baking temperature: 350 degrees
Baking time: 50 minutes
Yield: 1 cake

Ingredients

  • ½ c shortening
  • 1 c honey (Our Hive/Upper Sandusky, OH)
  • Zest of one orange
  • 3 yolks
  • 2 c flour
  • 2 t baking powder
  • ½ t salt
  • ½ c milk
  • ¼ c ground almonds
  • Sliced almonds for garnish
  • honey

Instructions

  • Preheat oven to 350 degrees
  • Stir flour, baking powder and salt together. Set aside
  • Cream the shortening. Add honey slowly until incorporated fully
  • Add the zest and yolks (one at a time) and incorporate fully
  • Add dry to wet alternately with the milk beginning and ending with dry
  • Stir in nuts
  • Pour the batter into a greased 9x9 pan and bake at 350 for 50 minutes
  • Brush with extra honey and sprinkle with sliced almonds while warm. Cool
