Amish Country Molasses Cookies

Baking temperature: 350 degrees
Baking time: 7-9 minutes
Yield: 48 cookies

Ingredients

  • ¾ c butter, softened
  • 1 c white sugar
  • 1 egg
  • ¼ c unsulfured molasses
  • 2 ½ c all-purpose flour
  • 1 t ground ginger
  • 1 t ground cloves
  • 1 ½ t baking soda
  • Additional sugar for coating (can us regular sugar or colored sanding sugar)

Instructions

  • Preheat oven to 350 degrees
  • In mixing bowl, beat together butter and 1 c sugar until creamy
  • Add egg and molasses; beat until combined
  • Add remaining ingredients and mix until well combined
  • Roll dough into 1-inch balls and roll in the extra reserved sugar
  • Place on ungreased or parchment lined baking sheet, and bake for 7-9 minutes or until just barely turning brown
  • Allow to cool for 5 minutes on sheet, then remove to wire racks to cool completely
