Ingredients

  • 3 lbs. green tomatoes, cored and chopped
  • 2 green peppers, seeded and diced
  • 2 red peppers, seeded and diced
  • 3 large onions, diced
  • 1 small head of green cabbage, finely grated
  • 3 T salt
  • 2 ½ c white vinegar
  • 3 c sugar
  • 1 t celery salt
  • 2 T mustard seed
  • 2 t ground mustard
  • 2 t turmeric

Instructions

  • Combine all vegetables in large bowl, salt vegetables and soak overnight. The next day, drain well
  • Combine all other ingredients in a large pot and bring to a simmer
  • Add vegetables and bring to a boil, boil 10 minutes
  • Ladle relish into prepared jars, leaving ¼ inch headspace and process for 15 minutes
