Did you know that at the Ohio State Fair, there is a special competition for those who make their own sauces? Whether you’re into making jellies, BBQ sauce or your own fresh salsa, there’s a place for you to enter your homemade saucy creations.
The Ohio State Fair’s Creative Arts competitions are a fantastic way to show off your skills in crafting, needlework, baking and culinary arts. Those who are interested in the food side these arts should enter the Cooking and Baking competitions. With thousands of dollars in prizes awarded each year, these competitions are not only fun, but they could have a big reward if your item places in your division. Last year at the 2014 Ohio State Fair, Linda Brownell from Bowling Green, OH took the first place prize in the salsa division of the Culinary and Baking Arts competitions. Her six-ingredient tomato salsa wowed the judges. If you’re looking to make some award-winning salsa to bring to a gathering or even just to keep at home for snacking, this may just be the recipe you want to use.
(yields 8 servings/8 half pints)
List of Ingredients
8 cups chopped tomato
2 cups finely chopped mixed hot peppers
2 cups finely chopped Vidalia onions
1 small can of tomato paste
1 bunch of cilantro, finely chopped
1 cup apple cider vinegar
- In a 6-8 quart pot, combine all ingredients except cilantro. Heat just until boiling and then turn down heat and simmer for 10 minutes
- Add cilantro and mix well. Ladle into hot and sterilized pint jars leaving 1/4” headspace. Apply lids and bands and process in boiling water canner 15 minutes. Remove and allow to set undisturbed for 24 hours.
